Harvest

 

Stake the plants to prevent them from falling over and for producing straight fruits. The fruit is ready to be harvested when it is deep-purple in color . But it must not have lost it's luster.

Culinary use

 

The slender fruits are excellent for frying, cooking and pickling. In China, the eggplants are served cold with a sesame sauce. In Szechawnese cuisine, the eggplants are fried and served with a spicy sauce. In Japan, the eggplants are used in the " tempura ", oven cooked and served with a ginger or soya sauce.
