The young leaves, anytime. Immature seeds, when green. The roots, in autumn.

Conservation

 

Dried or pickled immature seeds. The roots: clean and peel, then infuse in wine or spirit.

Culinary use

 

Use the immature seeds mixed in fruit salads or crushed in ice cubes.

 

 

Use the finely chopped fresh leaves in salads, omelettes, soups and stews. Cook with certain fruits, like rhubarb or red currants, to reduce it's acidity.

 

Peel and cut the roots in small slices to serve on salads.

 

Landscaping

 

Has the appearance of a delicate fern with nice white umbel like flowers. Interesting plant when used in clumps, behind nasturtioms, accompanied by plants having a greyish foliage like the santolina or the wolly yarrow tomentosa.
